Easy Enchilada Chicken
Listen. I. Am. Not. A. Chef.
I can cook if I have a detailed recipe that I refer to, reread, memorize and follow 100% to a T. My sister on the other hand can open up the fridge pull out four ingredients and without even blinking an eye and have a full cooked delicious meal for you. I can lift the weights, she can cook, its that simple.
So, whenever I put recipes up here I want you to know first off you aren’t going to get an hour long backstory that you have to scroll through. And two, I have tested the meal and if its easy enough for me to prepare and eat then it will be a-ok for those families or individuals who are just trying to fuel their bodies in the easiest, quickest way possible.
This is something that I make literally every week. On Monday I get out my Instapot, I throw in the chicken and my lunch for the week is ready. I can usually eat on this dish with my macro numbers for four to five days. It takes the guesswork out of lunches when I am slammed for time. The fact of the matter is that if it’s not ready and easy I’ll either not eat (terrible) or eat something very bad for me without measuring.
So, without further ado.
Also quick side note, I serve this Enchilada Chicken with cauliflower rice. I grab a couple frozen steam fresh cauliflower rice bags at the store and those can microwave in about 5 minutes. One bag with my macros lasts me about two days.
